Ingredients for vegetarian Shepherd Pie recipe:

1 cup vegetable stock or water
1 chopped large tomato
3 cups cooked legumes
2½ talebspoon of olive oil
½ cup of minced onion
3 cups of chopped mixed vegetables
2 cloves of minced garlic
2 to 2½ of cups mashed cauliflower
1 teaspoon of gluten-free soy sauce
Little bit of pepper

Directions on how to cook golden Shepherd Pie For Vegetarian :

1. First, heat 2 tablespoon oil over medium heat and add garlic and then sauté for 2 minutes.

2. Add onion and continue sautéing until soft at about 5 minutes.

3. Add tomato and cook for two more minutes, stirring frequently and make the mashed potatoes.

4. Add stock and vegetables, bring to boil, cover, lower heat, and cook until vegetables are tender, about 5-10 minutes.

5. Add soy sauce and pepper, taste, and adjust seasonings as necessary.

6. Preheat the oven to about 350. Use remaining ½ tablespoon of oil to grease pie plate.

7. Arrange vegetables in it, then cover with a layer of mashed potatoes. Garnish.

8. Bake until bubbly, about 30 minutes. Serve hot.
